Can someone tell me why the Sail & Rail tickets from Dublin to UK via Holyhead are Euro 39 (zone A), Euro 40 (zone B), Euro 42 (zone C) and Euro 44 (zone D), yet the equivalent tickets originating in the UK are £25, £26, £27 and £29.

The exchange rate being used here is approximately £1 = Euro 1.50 which hasn't been the case for about 2 years.

Chances are good that it's because the prices haven't been changed in 2 years.

There is also the factor that you can go much further in Britain than you can in Ireland.

2010 Sail & Rail tickets from Dublin to UK via Holyhead have dropped Euro 4 to Euro 35 (zone A), Euro 36 (zone B), Euro 38 (zone C) and Euro 40 (zone D), and the equivalent tickets originating in the UK have risen by £1.50 to £26.50, £27.50, £28.50 and £30.50.

It's good to see that the exchange rate being used from 2010 has narrowed to approximately £1 = Euro 1.30. Better, but hardly equivalent to the market rate of about £1 = Euro 1.12 (as at today). You're financially better off buying the return leg in the UK in sterling on your credit card and they will give you a much more favourable conversion rate to Euros.
